“Panettone for me as an Italian has a big meaning when it comes to Christmas. A Christmas without panettone isn’t Christmas. It’s my favourite cake during the festivities, even before or after Christmas. This is my trifle with an Italian twist!” – Davide

Davide’s panettone trifle is a celebration dessert that combines authentic Italian tradition with the indulgence of a layered trifle. Fluffy panettone, Italy’s iconic Christmas cake, is layered with creamy mascarpone custard, tart raspberries, tropical passionfruit, and juicy mango. 

Designed for effortless entertaining, this frozen trifle is make-ahead convenient and ready to impress. Simply thaw in the fridge and serve straight from its container or transfer to your own trifle bowl for a personal touch.

Perfect for Christmas lunch, festive gatherings, or birthdays, it’s a restaurant-quality dessert that takes the stress out of entertaining. Davide recommends topping it with fresh whipped cream and extra fruit just before serving for a final flourish that makes it look as good as it tastes.

Preparation Instructions

1. If you have a trifle dish similar size, you can pop out the frozen dessert and transfer to your dish before thawing.

2. Alternatively simply pop the dessert into the fridge in its current container to defrost before serving.

Grapefruit & Gin Glazed Ham

"Since I moved to Australia there are dishes that I’ve mastered - and the Christmas glazed ham is one of those. This version is one of my favourite, I also love it because with the leftovers you can have during the festivities as a sandwich or in a salad or as main itself."

Davide brings a modern twist to a festive classic with this Grapefruit & Gin Glazed Christmas Ham by combining the warm, comforting notes of glazed ham with bright citrus and a cheeky splash of gin. Think golden, sticky crust meets juicy, tender pork; this is a ham that steals the spotlight.

This dish is ideal as the centrepiece of your Christmas lunch, or any time you want a show-stopping roast with real character.

Preparation Instructions

Step 1 - Defrost ham and oranges in fridge 2 days prior to cooking

Step 2 - Preheat oven to 180°C and remove ham from packaging and place on a wire rack inside a deep oven tray.

Step 3 - Pour 3 cups of water into the bottom of the tray, roast for 45 minutes whilst basting the ham with the citrus glaze every 15 minutes. Cut oranges into 3mm slices.

Step 4 - Arrange slices of blood orange (supplied) on top of the ham, securing with toothpicks.

Step 5 - Continue to roast a further 30-40 minutes basting every 10 minutes until golden and caramelised.

Step 6 - Transfer to a serving plate and brush with left over glaze, remove toothpicks and carve.

Prosciutto Wrapped Stuffed Turkey Breast

A festive favourite, handmade with care by Davide

This special dish is Davide’s twist on a classic roast - a beautifully tender deboned turkey breast, stuffed with prosciutto, spinach & parmesan then wrapped in savoury prosciutto, creating the perfect balance of flavour and texture. Inspired by a whole deboned chicken Davide used to prepare during his early years working in an Australian restaurant, this recipe brings together tradition, nostalgia, and festive flair.

Moist, flavourful, and elegantly presented, this roast makes a stunning centrepiece for your Christmas table. The salty crispness of the prosciutto locks in the juiciness of the turkey, making it easy to carve without the stress of roasting a whole turkey.

Preparation Instructions

(This product is raw and requires cooking)

Step 1 - Defrost: Place the sealed product in the fridge 48 hours before cooking to defrost completely.

Step 2 - Remove from the fridge an hour before cooking.

Step 3 - Preheat an oven to 160°C (fan forced) and place the turkey into a roasting dish with the netting. Roast for 60 minutes till the prosciutto is nice and crispy. You can alternatively remove the netting for the last 20 minutes to crisp up the prosciutto.

Step 4 - To check the turkey is done, insert a meat thermometer into the centre. We recommend removing the turkey at 70°C and allowing the turkey to rest for 20 minutes before carving, the internal temp will continue to rise while resting.

Step 5 - While the turkey is resting, open the gravy pouch and reheat the contents in a pot on the stove, stirring to combine.
